Eats: Ore-Ida® Cheeseburger Tater Tots

A couple of weeks ago I received the Influenster Jingle VoxBox which had a coupon for a free bag of Ore-Ida Tater Tots. Pure coincidence that it had that coupon because Bub and I had been wanting to try our hand at making Cheeseburger Tater Tots. See, Bub doesn't have a stove but has a cooktop and so when we want to make food at his house, we have to consider whether or not it can be made on a cooktop and well, this can be. With Superbowl 50 being right around the corner, I thought it'd be a good time to share this recipe. I'm not a big sports fan so I'm not even really sure who's in the game, (I think I remember seeing something about the Carolina Panthers, but even then, I'm not sure. HA!) Anywho...

You'll Need: 

OreIda-Tater-Tots

  • Ore-Ida® Tater Tots
  • 1.5 Lbs Ground Beef (or your preference)
  • Mozzarella cheese
  • 1 Egg
  • 1/2 C. Flour
  • Salt, Pepper, Garlic Powder, Cayenne Pepper to taste
  • Oil for frying
  1. Crumble, Season, Cut.

Crumble the entire bag of tater tots. Obviously let them thaw first to make it easier and even if they're slightly frozen, your hands will feel it Add the egg and flour to the tater tots. Next, season the meat by adding the spices and mix. Then cut the cheese into small cubes. 

2. Cover and Cover.

OreIda-Cheeseburger-Tater-TotsTake a cube of cheese and cover it entirely with ground beef. Next, take the ground beef ball and cover it in the tater tot mixture. It'll look more like a ball than a tater tot so try to reshape them as you're adding the tot mixture. 

3. Fry.

Next Fry up all the tots for 3-5 minutes on each side. One bag of tots and 1.5 lbs of beef made about 20 give or take. Bub was eating them as they were coming out, so I couldn't get an accurate count, but they were pretty big sized tots for both of us, and Bub is no small guy. This would be GREAT for the munching! If you've got a lot of people over, you can just double the amounts to make sure there's some for everyone.

A Small Superbowl Sunday Spread

I'm not a big football fan. Angeleno's don't really have to be. We choose random teams to like for arbitrary reasons. Me, for instance. I like the Miami Dolphins just because of Dan Marino in "Ace Ventura". "Ace Ventura" isn't even on my top 50 (or possibly 100) favorite movies. I mean, there's the 49ers but they're from San Francisco. Eight hours away. There's the Raiders and nobody really likes them unless they're in a gang, or used to be, or grew up in/near Oakland. (Also eight hours away.) There's also the Chargers but hey, they don't really count. Sorry San Diego (not sorry). 4 hours. Some of us might root for the Rams because they were here back in the day so really, any team is up for grabs.

Honestly, I'm not even sure who's in the Superbowl this year. I heard it's the Seahawks, but I have no idea who the other team is. I'm getting off point here.

Just because I don't really watch football doesn't mean I won't have a Mini Superbowl party, because it's another reason to cook. If you haven't gathered that I like food by now, then I don't know what's wrong with you. So I decided to do some testing to see what I wanted to cook for the big day. It's all fairly simple  and doesn't take very much time to make, so you won't be slaving in the kitchen all day. 

Queso Fundido with Soy ChorizoFirst up, queso fundido, or melted cheese, with soy chorizo.

Preheat the oven to  425 degrees. Grate Mozzarella and jalapeno jack cheeses. (I used a small block of both) Slice a 1/8 of an onion and cook with the chorizo. When fully cooked, layer the cheeses and chorizo in a baking dish until all the ingredients are used up. Place in oven for 30 minutes or until the cheese has fully melted. Eat with tortilla chips or warm flour tortillas.

BBQ Chicken Mango SkewersBaked BBQ Chicken and Mango Mini Skewers. 

Cube one chicken breast and cover with BBQ sauce. Place in the oven to bake for 30 minutes on 350 degrees. Peel and cube a mango and refrigerate until chicken is fully cooked. Once done, place a piece of Chicken and mango on the skewers and they're ready to serve. Makes about 24 pieces. 

Jalapeno QuesadillasJalapeno Quesadillas

Quesadillas are super simple to make. You've never made them before? Seriously, what's wrong with you?! It's a cheese sandwich essentially, but with tortillas. I used wheat tortillas, Muenster cheese, slices of pickled jalapenos, you can usually find them in the ethnic food section of your grocery store. Heat on both sides until the cheese is all nice and melty. Slice into 6 pieces and chow down. 

Of course, I'll have wings and carrots/celery, but I think I'll let WingStop do that part for me. Maybe I'll bake a cake too. I don't know....

Melon Provolone Crostini

How to make Crostini: 
Cut a baguette loaf into slices. Brown in a toaster or broiler. Rub with a garlic clove. 
Provolone-Melon-Crostini

Cover with provolone and stick back in broiler until cheese melts. Cut a piece of melon into thin slices and top over the provolone.

Eats: Tomato Avocado Tartare

So when I heard the term tartare, I was completely confused because I couldn't understand the difference between a tartare and a salsa. 
 

Beings that I go to a school with an awesome Culinary Program, I just asked one of the culinary teachers. The difference is, Salsas are intended to be spicy, while tartare's aren't necessarily intended to be. Just served cold. *BAM* The more you know...

 

You'll need: 2 tomatoes, 2 ripe avocados, 1/2 lemon, 2 tbsp. olive oil, 2tbsp. chopped cilantro, sesame seeds, salt and pepper.

 
1. Cut tomatos in fourths, seed, and dice. 
2. Cut and remove pits from avocado and dice. 
3. Mix the oil with the lemon, and cilantro in a bowl. Season with salt and pepper. 
4. Add the tomatoes and avocado with some sesame seeds, and mix. 
5. Chill in the fridge for about 20 minutes before serving.

Eats: Prosciutto Mango Skewers

This is one of those things that I wish didn't take as long to prep than it does to eat because I really love all the flavors that are involved, but when I do make them. Oh! Heaven. At least in my opinion. 

Mango prosciutto mint mozarella skewers
Prosciutto Mango Skewers, Makes 20 skewers
2 mangos
10 slices prosciutto
10 balls mozzarella
20 mint leaves
Mozarella mango mint prosciutto skewers
Peel the mangos and cut into cubes, cut the mozzarella balls and slices of prosciutto in half. Wash mint leaves and pat dry. Take 20 toothpicks and add one piece of mango, 1/2 slice of prosciutto, 1 mint leaf and 1/2 mozzarella ball on each. Serve immediately. Enjoy!

I got invited to the Bzzagent MorningStar Farms campaign recently and I got to choose a complimentary MorningStar Farms product to test. Beings that I like spicy food, I chose to try to Spicy Black Bean patties. I originally didn't want to do "hamburgers" but then decided to spin it slightly. I thought I'd do sliders instead. 
 
Using King's Hawaiian Sweet Rolls, a slice of Pineapple, Romaine lettuce, Chipotle ranch dressing and Jalapeños, I created Spicy Hawaiian Sliders. Grill the slice of pineapple. Then quarter the patty and pineapple. Use the Chipotle Ranch dressing as the condiment. Add a piece of lettuce and a few jalapeños and you're set.  1 patty makes 4 sliders.
 
I had tasted MorningStar patties before and didn't have quite a positive experience the first time, but I was willing to try it again and I'm glad I did. I was intrigued with the thought of Spicy Black Bean patties. I really loved the taste of the patties. As soon as I opened the package, I could tell they were going to be spicy. The texture of them didn't even remind me that it was actually meatless. I could definitely see myself eating more of these if I decided to continue doing Meatless Monday.
